Choosing the Right Beans
The foundation of a great pour-over starts with quality beans. We recommend single-origin beans from Chiapas or Oaxaca for their bright acidity and complex flavor notes. Look for beans that have been roasted within the last two weeks for optimal freshness.

Grind Size Matters
For pour-over brewing, you want a medium-fine grind — similar to the texture of sea salt. Too fine and your coffee will be over-extracted and bitter. Too coarse and it will taste weak and sour. Invest in a burr grinder for consistent results.

- Hario V60: Medium-fine (slightly finer than drip)
- Chemex: Medium (slightly coarser than drip)
- Kalita Wave: Medium (consistent, flat-bottom extraction)
Water Temperature
The ideal water temperature for pour-over is between 90°C and 96°C (195°F–205°F). Water that is too hot will scorch the grounds, while water that is too cool will under-extract, resulting in a flat-tasting cup. If you don't have a thermometer, bring water to a boil and let it rest for 30 seconds.
The Pour Technique
Start with a bloom pour — wet all the grounds with about twice the weight of coffee in water and wait 30 to 45 seconds. This allows CO2 to escape and prepares the bed for even extraction. Then pour in slow, concentric circles from the center outward, maintaining a steady stream.
Step-by-Step Process
- Measure 15g of coffee for every 250ml of water
- Rinse your paper filter with hot water to remove paper taste
- Add grounds and shake gently to level the bed
- Start the bloom pour and wait 30–45 seconds
- Pour in slow circles, keeping the water level consistent
- Total brew time should be 2.5 to 3.5 minutes
